They sell chocolate covered coffee beans which apparently have a lot of caffeine. I've had them before, they're tasty but nothing hits me like a red bull or Pepsi/coke with coffee mixed in or just a coffee works pretty good.

Its mostly a meme from the 70s, its okay but not for everyone. CocaCola even like mid 2000s?? Release a Cola and Coffee drink under the coca cola label. It failed though I think.
OP Sky is the limit with caffeinated food since it is water soluable. Seriously, Make Coffee with corase ground, Put it through a heavy filter, boom caffeinated water. Yopu know decaf coffee, using the swede method, is basically just whole cofee beans that have been soaked in warm water for a bit right?

my only thinking is that making coffee and just adding it to a recipe would let all the caffeine burn up while cooking, no? I tried making these protein bar type things and added some instant coffee crystals to hopefully scavenge some caffeine but it didn't really turn out.

I actually did this. I made my own chocolate bars and added crushed coffee beans into them.

As far as other caffeinated food, you can try making coffee desserts, adding coffee to cakes, cookies, etc. Spike your hot chocolate or protein shakes with coffee. Or just dip whole coffee beans in chocolate and eat them. Pic related.
