Simmer with san marzano tomatoes, basil, more garlic, onions. Add shredded carrot for sweetness.

The fennel in the sausage is a nice touch.

50% beef, 50% pork, finely chopped garlic, parsley, beaten egg, fresh grated parmigiano rggiano, bread soaked in milk. Sometimes I add pinenuts if I'm trying to get my Sicilian on.

50/50 blend of ground chuck and mild Italian sausage.
Egg.
Bread crumbs.
Italian Parsley.
Chopped garlic.
Black Pepper.
Grated Parmesan.
Milk.
Olive Oil.

Mix and roll into balls. Cook in oven on an aluminum foil lined baking sheet coated with a little olive oil to prevent sticking.

When the balls are done I like to move them to a large saucepan with marinara and slow cook them for a half hour.

Can be eaten with pasta or as a sub sandwich.

Mozzarella chunk in the middle of the ball
Bake until done
