On the note of butternut squash is there a method of easily peeling it that isn't roasting it?

Honestly, no.
You can try just bisecting it lengthwise and using a spoon to gut it but roasting it first really does yield the best results
Seafood doria.
Cover 200g shrimp and 100g scallops in white wine (about 125-150ml) and let soak 15 minutes.
Saute 1/2 onion, minced.
Add 100ml chopped mushrooms, and cook until soft.
Ad seafood mixture, 2 cloves garlic, pinch of salt and white pepper, and cook for 5 more minutes.
Reserve liquid, combine solids with 500ml leftover rice in a casserole.
Add bechamel sauce to liquid until it totals 500ml, then pour over solids.
Cover evenly with 250-300ml grated melting cheese.
Bake 10-12 minutes at 175°.
Chicken or more mushrooms can also be substituted for the seafood.

I'll just have to start adding it at a later step in soups. Peeling it raw isn't worth the work and roasting it should only improve the flavor.
