Depends on the sides/sauce.
I like to use basil, oregano, rosemary, thyme, S&P, garlic, and lemon zest for a whole roasted chicken
For a more Mexican/Cuban vibe I tend to go cumin, oregano, smoked paprika, cayenne, garlic, and a bit of lime zest.
If I'm going for a heavily sauced chicken dish like wings where the chicken is smothered, I just do salt and pepper and let the sauce speak for itself.
