Anyone got a decent Ramen broth recipe? Preferrably chicken. Don't fuck with that 2 minute insta-ramen shit.

This recipe doesn't fuck around with dashi, but if you want you can probably add it
Items needed: chicken broth or chicken with which to make broth, soy sauce, mirin, sesame seed oil, shiitake mushrooms, garlic, ginger
Step one: saute a few cloves of garlic and maybe a tablespoon of minced ginger (if you are a pleb you can use powder) in some sesame seed oil, fairly low heat in whatever pot you plan on making your broth in
Step two: Add soy sauce and mirin to pot, three tablespoons soy sauce, 1 tablespoon mirin. If the soy sauce starts to burn as soon as it hits the pan, you are using too high a heat
Step three: Add chicken broth, for the above listed amount of soy sauce, four cups is probably good, stir to combine and bring to a boil, then lower to a simmer, and simmer for a bit
Step four: Strain to get out the garlic/ginger (you can skip this step if you used powder like a pleb)
Step five: add shitake mushrooms, bring to boil, simmer, etc
Step six: Adjust flavor with additional soy sauce to taste
