Cook more, freeze for later.

Also, it's pretty hard to overcook food in a slow-cooker. The timer is quite optional and it's better to leave the food cooking than to leave it cold for too long..

If you piut less food in at the start of the process, you will get less out at the end.

In the unlikely event you make a friend or need to cook food ahead and freeze it, that extra capacity can be utilized

Underfilling isn't a thing so much as overfilling. You should always leave an inch or two from the lip. Also, never lift the lid when cooking - you lose an hour of Cook time.

You can always cook less in a bigger cooker you cannot cook more in the smaller cooker. Go for the 6quart kitchen aid model. About $80-100.
