It was suprisingly moist I wanted the top layer to get a crunch going on I put bread crumbs on top I used only finely shredded cheese on top mixed with the crumbs.

I would dot those bread crumbs with butter, and use more of them. I cover one of these with foil for first 30 minutes, and bread crumbs and butter are already there on top. Uncover, top with cheese, and then let it go another 15 minutes until desired browning and crustiness. I always make my own breadcrumbs for topping mac n cheese. I just grab whatever stale ends of bread are laying around, and rub them against a grater or pulse in the food processor. You want some of your crumbs very large which you get with homemade. The storebought stuff is too fine and doesn't crunch up. All else fails, buy panko.
