Why are seafood starters so much better than main courses?
Seafood starters - choose from: scallops, oysters, clams, cockles, mussels, dressed crab, smoked salmon, gravadlax, potted shrimp, mackerel pate, crab bisque, sushi, carpaccio, cerviche, fried squid, prawns, octopus, etc.
Seafood mains - choose from: white fish #234, white fish #547, white fish #422, white fish #3979 etc. (plus the obligatory lobster for a surcharge)
You have to go to specialist fish restaurants to get actual interesting main courses, but even there the starters are always better

Not all restaurants specialise in particular things.
Unless you live in flyover land where every eatery is a chain outlet with a gimmick, if you go to a reputable restaurant then you can expect both the fish and the meat to be good quality

Well because a lot of seafood is small and delicate and is made better with refined sophisticated flavors and isn't something you shovel into your mouth to get full
