I'm very simple though...cavatappi cooked in a parm and smoked gouda cream sauce, topped with some farmers market cheddar I get, then placed under the broiler for a minute or two

Depends. Side if it's ONLY mac and cheese, but add meat or veg and it's a main.

Why do people insist on adding ingredients to macaroni cheese that doesn't need to be there?

Just leave it be and have a big bowl of it with some black pepper and ketchup
