I made pic related using vegan 'salmon.'
They're just salt roasted carrots marinated in a smokey sauce for a few days.
Wouldn't say it tastes like salmon like the vegan claims, but it does taste like a smokey carrot and it's pretty delicious.

I've been roasting carrots, potatoes, and/or squash almost every night even though it's summer. Fresh dill on the carrots is amazing. Gonna roast some broccoli with lemon tonight.
red potatoes cooked in coconut oil with rosemary, 2 scrambled eggs, and some wilted greens is a nice simple breakfast.
Was including salmon in my diet until I got a wormy fillet. Fuck that shit, back to veg.

Do you add fresh dill before or after roasting? Also do you drizzle olive oil before cooking or just dry bake the carrots?

Drizzle olive oil and make sure every bit is coated but no pooling on the bottom of the pan. Herbs cook much faster than root vegetables so technically you're supposed to add it after roasting or at the very end. I do both.

I feel that way about meatless, although I only have fully vegan days three or four days a month. I go meatless on days before I have some important event, it really clears my mind and my energy levels are up.

I'm not a vegetarian for moral reasons, but rather because I feel a lot better, eat a lot more (generally lower calorie density), cook more interestingly.
