Regarding the last point, most people who rave about sushi don't actually eat sushi. They eat these sauce drenched, deep fried rolls. Yea, they're good and unique, but not sushi.

Even in non-flyover cities with a solid japanese population, you will have to put in an effort an a legitimate sushi place. And by legitimate, I don't mean expensive. Sushi might cost a little more than going out to a decent restaurant but it doesn't have to cut a hole in your pocket.

The sushi pic you've posted doesn't even look good. That salmon's color is bright orange, with minimal amounts of fat. Bad, farmed fish and the worst part of it right there. That wasabi looks like it's oxidized to hell and doesn't have the vibrant green color it should have. That rice doesn't even look like the shortgrained rice that makes nigiri the elegant experience it is. It's very densely packed and will make you chew more than you should.

Now, maybe you just don't like sushi, and you know what's up. That's okay. But it's more likely to me that you're not getting decent stuff and not talking to people that are either.

Keep in mind the kinds of people who freak about sushi being a war on the proud white race are likely to consider Olive Garden to be fine dining. No. I buy prime primals of grassfed bone in ribeye roasts, cut them into steaks and vacuum pack and freeze them to eat whenever I don't want to bother with much cooking effort. So yeah, steak is overrated. It's just a meal I can throw together in minutes.

Some time last year or the year before the food press in my city was having fits about how macarons were literally I can't even and spent months circlejerking with the trendy little alleyway decor showrooms about which ones you HAD to try this week. In Japan sushi places are separated into "businesses" and "restaurants" depending on their primary goals. Business sushi is there to make money and although there is a minimum bar for quality. If you go to a place like hamazushi, it's pretty garbage compared to the real deal. Restaurants (sushiya) are where you find the billion times folded knives and dedicated chefs. There's plenty of good wine at reasonable prices, you just have to be smart about your shopping. Good Napa cab for instance is not cheap and cheap Napa cab is horrible. Then there's stuff like Barolo or Pomerol which is simply never cheap. Then there's stuff like Lodi zinfandel which is simply never good.

But from places like the Finger Lakes or the Loire Valley or Alsace or South Oregon, there's pretty good wine for reasonable prices (and sometimes also, amazing wine for high prices). And if you're scraping the bottom of the barrel for budget, Chile has got some mass-market wines that are perfectly respectable.

Anyway wine doesn't really have much marketing at all. It's not on commercials like beer and it's not on billboards like liquors. In a STORE, wine prices tend to indicate quality levels fairly well. A five dollar wine will be trash. A ten dollar wine will tend to be a good daily drinker. A 15 dollar wine will tend to be nice. A 20 dollar wine will tend to be great. After 25 or 30 dollars wine tends to be better but in most people's palates has very little marginal returns in terms of being better tasting. What I'm saying is that most people's wine experience should max out at around 30 dollars for a bottle and that's how most people tend to shop anyway.

But that's only for domestic wines. Taking into account the fact that certain lands are expensive in California/Oregon/etc and that will add to the cost of the bottle. Argentinian Malbecs can easily be as good for ten dollars as a 20 dollar bottle of Willamette Valley Malbec. On the other hand shipping costs for French wines will raise costs. A 15 dollar Bordeaux may only be as good as a ten dollar Napa Valley Pinot.

Yes, you are correct in saying that wine is much different than it used to be. To most people wine was just what you had at a nice restaurant or it was jug wine that you had with dinner. Old people still buy jug wine like Livingston or Beringer because its what they drank at the table and it's not expensive. Some of those jug wines are actually pretty decent too. CK Mondavi jug wine and Black Box boxed wine is actually good wine.

Entirely overused in western cuisine currently. Not even 50 years or so ago you only found garlic in Southern European cooking and now its in FUCKING EVERYTHING. Garlic is so overpowering and forward in flavor it can easily become a crutch and fuck up any nuance you had going.

In my region, however, Mexican, Chinese, Thai and South Indian are all horribly overrated. Mexican and Chinese make me ill, most Thai restaurants overcook their meat and South Indian tends to lack subtlety. Oh yeah, and Vietnamese pho is bland, and most kebab joints serve meat that is too dry.

Like most people who grouse about nice things being a scam, you don't understand the term "terroir" as it is used when discussing wine

The literal translation is something like "dirt" or "land" which is why it's usually misunderstood as being *only* about the dirt. But "terroir" when discussing wine refers to all the environmental factors. Water supply, sun, temperatures, and so on. These are not subtle effects, you do not need a trained palate to differentiate between wine made from the same varietals grown in drastically different climates. It's further amplified by the vinification choices that are made by the wine maker, sometimes in response to terroir. Total malolactic conversion vs no malo, for instance. Or chaptalization vs none. Or whatever. You can look these up, they are usually baked into AOC or national regulations which are usually dismissed by plebs as being about "protectionism" even though the reality is they are very helpful in predicting what a bottle might taste like since just knowing the grapes is usually insufficient information.

As you said, the soil differences are there but they are subtle enough to get butthurt over, if that's how you get your rocks off. A few higher end wineries will provide detailed technical sheets on the wine, and sometimes you can have the opportunity to do a side by side comparison of the same clones grown in two nearby patches of land with different soils. However, you're not going to find that kind of thing at a grocery store, or even most wine shops, since most consumers (although this is changing) are put off by technical notes and just want inane artwork and "tasting notes" instead.

No, not like most seafood. Some seafood goes bad very very fast after harvest, some does not. Most fish will keep for many days on ice. Oily fish like mackerel or herring go bad within a day. Red mullet even faster. Crabs and lobsters go bad even faster than that. The only practical way to ship them is to either cook them first and then ship the cooked product (which is why "crab legs" at the supermarket are always pre-cooked when you buy them), or they are shipped live which is obviously more costly than shipping just frozen seafood.
