I'm thinking of getting frozen pizzas, maybe pepperoni or sausage or both. Then adding my own tomatoes, onions and mushrooms before placing in the oven.

Just get whatever's cheapest. At some point it doesn't matter, especially if you're just going to add your own stuff on top.

The issue with adding ingredients to frozen pizza is that what you are adding is not frozen. This leads to uneven heating
This is OK for certain things, like shredded cheese where you are just warming it. But vegetables will not cook correctly (likely raw), and tomatoes are the worst.
