hi /ck/, today I am preparing a green bean soup. It's one of the comfiest foods I know and it's usually a winter dish, but it has been a really bad summer here so far so I am really in the mood for this.
Ingredients:
1kg of green beans, I don't know the exact english word for those
600g beef, from the ridge
3 raw sausages (about 400g)
1 piece of bone with marrow in it
300g potatoes
200g celery root
200g carrots
200g parsnip
3 teaspoons of instant broth (yeah I know i am the worst)
salt
pepper
2 bay leafs
savory
first I am cooking the bone with the bay leafs for about 1 hour. some people throw in the meat when the water is still cold, but I have made the experience that it becomes chewy that way
in the meantime, i cut parsnip, celery and carrots into cubes...
... beans...
... potatoes...
the meat after 30 mins of simmering, i cut it into cubes but don't put it back into the soup again because first...
... i let the vegetables cook for 30 mins with meatballs made from the sausages.
then let the soup simmer with the meat for 1 hour, and put in the seasoning (lots of savory, it is really necessary for a good bean soup imho)

Looks like good comfort food. Do you happen to know the kind of spices that were used in the raw sausage?

it was a raw german style Bratwurst, so it was a pretty subtle with some marjoram.

Any reason you didn't brown the meat before putting it in?
