There seems to be two broad categories of Chinese dumplings- those with thin, noodle like skin similar to wonton (pic related, bad quality though)
Then there are those that have thick, chewy, floury skins.
Which do you prefer?
I like both, but I like the second, chewy kind.

I like the cantonese style dumplings a lot, especially in a yum cha. Delicious as fuck. But why are xiao long bao missing? They are excellent dumplings and pretty easy to cook.

Steam them longer
Overall I tend to gravitate back to boiled handmade dumplings. Steamed and panfried are great, but a home done pork and cabbage dumpling with hand made dough boiled is brilliant.

Even asked at a specialized fish store once and they told me they boil the shrimp on the ship right after they caught them.
