I've become obsessed with pizza over the past year and I've noticed that other anons here share the same obsession. This is our thread, it's all about pizza here. Share your favorite pizzas, tell pizza stories, tell us about your ideas for pizza recipes, etc. This is a pizzafag safe space, let it all out. I, personally, eat it for over half of my weekly meals.

The obligatory trip to Lou's is always the highlight of whenever friends/family are in town. To me, it's togetherness good times in food form. For that totally subjective reason, I consider it the greatest pizza in the world.

How do I know when my pizza dough is done kneading? I just made some dough and I'm letting it rise for like 5 hours then tonight I'm putting it in the fridge until tomorrow night ~24h for dinner.
Anyways I knead it 10-15 min until it became really strong and elastic and when I pull it apart it tears instead of becoming a thin strip without breaking if that makes sense. Would that be the sign that is it done kneading or did I fuck up?

Also how much yeast do I need? I used about half a teaspoon, and does that stuff go bad/lose its effectiveness because it is like 2 years old.

If it tears when you pull it, you need to knead it more. Develop more gluten and it will stretch exponentially.

You will know if the yeast is ok by whether ir rises or not Half a teaspoon for a single pizza dough is about enough. I usually use fresh yeast so I cant remember the exact ammount. Maybe start the yeast in some water with sugar to get it kicking

Just keep kneeding. For a pizza dough i do the following
1 mix water and flour/salt and sit for 30 minutes
2 add yeast
3 properly mix
4 kneed a good 20 minutes then rest
5 kneed again after 1 hour or so

Rough guidelines, seems to work though. the tearing occurs at the start of the second kneed, just focusing on squashing the dough together, that is what forms gluten bonds, which makes it stretchy

Chifag here. Deep dish at Pizzeria Due is my fave, but like another anon pointed out earlier, the whole "Chicago is Deep Dish Pizza" is a meme. I only go there twice a year. The only place to get good deep dish is downtown. If you go to suburbs you get Giordanos which is mass produced swill for tourists and people who have no taste buds.
I have never been a pizza hater. I love pizza from New York and I like trying some of the crazy things they do in California because spinach and sun dried tomatoes are awesome.

The only pizza I will not eat is thin crust grease pizza like what Little Caesar's makes. Theres a reason its only $5 for a large. I'd rather have frozen Tombstone or Red Baron tbqh.

If I had to give a recommendation to a tourist I would tell them Pizzeria Due for deep dish. You'll get what Duff Goldman calls "the wheel of meat". Sausage is pressed into a large circle that covers the entire circle. If you like margherita/napoli got to Spacca Napoli, great stuff and great flavor combos.

My normal "I'm tired, its Friday, grab my bitch and some pizza" i prefer thin crust at Aurelio's. The sauce is fantastic.

Are you Argentine? My girlfriend is from there and her dad owns a restaurant in the south; the pizza is fucking weird (although good). They use a very thick layer of cheese, and often put sauce on them. As the swede commented, here in Scandi it's pretty common to put sourcream/garlic sauce on pizza if its with kebab, but in Argentina they seem to put Salsa Golf (Ketchup/Mayonaise) on damn near every pizza.

Anybody else hail from a Portuguese area of the US and know the wonder that is chourico or linguica? Growing up, I never cared for pepperoni because this stuff was far and away the superior spicy sausage.

Not from a portuguese area, but I am a portuguese american:

Linguiça is mild, chouriço is "hot", but hot for portuguese people is still milder than what you think of. Chouriço is just generally more spiced. It's also used to refer to a sausage kind of like black pudding.

Just be aware that in my experience linguica tends to be a lot harder from the smoking process. Kind of like a jerky.

Made a dough with 00 flour. bit of oil and salt

Adelaide tomato -- I live in Australia and this time of year this is the best available raw tomato

mozeralla cheese

I topped it with oregano and salt with a sprinkle of sugar
Was pretty fucking tasty, base was about 3 milimetre thick, very impressed

I did shape it by hand and the outer ring was crunchy on the outside and fluffy on the inside and not dry thats why I tought I made the middle too thin because only the middle part was like that.

I wouldn't say I'm obsessed with pizza but I do enjoy it on the rare occasions I have some. Recently I had the 'Big Crave' at Pizza Delight. It's essentially a donair pizza in its most literal form, and to my knowledge a donair is basically Canada's version of the UK's doner kebab. A donair starts with pita bread, add cheese (optional), add donair meat (generally beef, heavily seasoned), lettuce, onion, tomato (I usually get it without tomato), donair sauce (made some myself before, mostly canned milk and sugar with some vinegar to thicken it), and then wrap it up to serve. Generally quite messy until you learn to eat it properly but even then it can be difficult, no shame in having to wash your hands after due to stickiness from the sauce.

The Big Crave's bread seemed far too thin and limpy, impossible to eat without having to use utensils because most of the fillings are at the centre meaning it's weighted down and just slides off. The toppings were donair meat, looked to have some pepperoni in there too, then lettuce, raw onion, and donair sauce. Inside the crust is a strip of donair meat and cheese, I think the crust MIGHT have been my favourite part but it's hard to say for sure. Either way, my only complaints is the thin bread, could use more meat around the edges near the crust since it was all within the centre, and I think perhaps more meat in general. Taste-wise, perfect, but at $15.50 CAD ($12.40 USD) I'd say it's too expensive. It was a good experience, but I'll be just getting donairs instead. Seems like they have more meat, and often around half or a third of the cost.

I hear pizza became popular in North America after troops stationed in Italy during WWII after the successful Allied Invasion got back home in the 40s. Very interesting, seems plausible, anyone else think it's true or false? When I think the roaring 20s or the dirty 30s in America or Canada, the last thing that comes to mind is pizza.

I'd add the water and just knead it enough so that the water gets mixed in, the more hydrated the dough is the better the crust more or less, of course you can't over do it but I've made pizzas few times where the dough could be poured basically and didn't really hold ball shape at all and it was huge bitch to handle and shape but I managed and the crust was fucking great
no need to do that but you should push it to your limits, just be patient with the shaping and keep improving little by little

Try making it from scratch, it's pretty cheap! Also, see what kind of deals you can get at the supermarket for meat. Today I got two packs of hotdogs (a dozen dogs per pack) for $3.78 CAD ($3.02 USD). Not even on special, turns out that's the standard pricing. So get yourself a big sack of flour, some yeast if necessary, and all the other ingredients necessary for pizza dough, buy in bulk if you can afford it so that you'll get the lowest possible price per pizza, and if you must, just use sliced hotdog wieners, hit it with some added pepper and seasoning perhaps. Pizza is a very simple and cheap food. If you truly can't afford it, then I question either why you're not making/receiving enough money, as well as what you're spending your money on other than food.
