Falafel is better made from fava beans than chickpeas. Dried split fava beans make a great porridge, seasoned with cumin, garlic, olive oil and parsley. Fresh favas are good in risotto. They're also good in tahini sauce.

My mooma does some delicious fava beans. Usually baby ones so they soft and not tough and just smothered in olive oil and simmered slowly with some kind of leaves. I really should get the specific recipe

cut onion and bacon
heat up pan with butter
cook at high temperature for stort time
add a little water and the beans
cook at medium temperature with lid on
stir it so it doesn't stick
cut parsley and chives and add when almost done, also salt and pepper

Made it kind of as a joke. Soaked the liver in lemon juice and tarragon for a while, dredged it in flour and cornstarch, and fried it with shallots - served with half a roasted lemon per serving. Boiled soaked fava beans for about 15 mins, fried with a little bit of pork belly and about half a shallot set aside for just such an occasion. Ate with fresh bread with tarragon-rosemary butter, and a 2012 Chianti.
