I'm a relatively good cook as I've been told, neither of us have allergies, and I'm willing to put in maybe 4 hours max. The only problem I can see is that I don't make that much money. I'm willing to save up but it probably can't be more than $100

Brine some chicken about 4-5 hours in advance and make some chicken piccata with pasta aglio e olio. Add whatever veggies you like or a nice salad on the side. Less than an hour of total effort (minus waiting for the brine) and it's an amazing meal that'll come well under your budget.
