I must have shit serrano in my area. For some reason the jalapenos are always hotter than them.

I always eat serranos whole and raw served on the side of what ever I cook. Its only considerate to the other people.

I like halving my serrano and dicing them thin, then putting them in soup. The residual heat cooks them so they're nice and tender.
