Also don't use too much oregano or cumin or salt
Sweat the onions and garlic with oregano, basil, coriander and chillies.
When Browning the mince, brown it half way then add to the veg mix, really separate it before you transfer it.
Keep the flavour profile simple, don't add too many ingredients.
You want it to be earthy and warming in flavour, with a hint of heat in the chilli
Don't add too much tomato paste
Use chicken stock
Don't use flour, makes it too glossy
Use a bit of red wine but not too much, to add richness

You can buy the dried chipotles and make the adobo sauce yourself. It's just cumin + oregano + paprika + vinegar + salt. Don't waste your money on that shit.
