Almost every knife reviewer says Masamoto VG is the best stainless knife, and Masamoto KS is the best carbon steel knife.
Why do other manufacturers even bother at this point?
Because at the end of it all, it's the preference of the person using it?
As soon as a company has built up a reputation for quality the try to maximise profit by skimping on raw materials or production or QC and it all goes to shit again.

You're thinking of the fastfood industry. Beyond your scope exist plenty of business that have been around for decades and the quality remains impeccable.
Knife general? I need a 8" santoku and I have a small budget, what can I get that isn't shit
Opinions on Dalstrong for a mid tier knife? I'm thinking about the Shogun X Chef.
Although since they don't distribute to Australia it'll be nearly $250 by the time I get it here :(

I'd go with Global.

Not everyone cuts shit 24/7. A default knife will suffice.
