Ponzu is a very specific fruit.

Ponzu's not as tart as lemons, you'll have a different mix of things if you just use lemon juice

I like it as a dipping sauce for potstickers, it's subtle but great

you could, but it won't taste the same. there should be a lot more flavors to good ponzu sauce. I made this recipe about 6 months ago and it's definitely more complex tasting than just lemon + soy:
