Starter cultures aren't necessary, though it could speed up the fermentation process. Wild cultures will suffice.

Nah, just wash it thoroughly with soap and hot water and you should be good to go. Also wash your hands.

I've been doing this for quite a while, so I'm pretty familiar with fermentation. However, I ferment one cabbage at a time due to my laziness and lack of motivation to increase jar size
