As long as you didn't burn the oil, you can just pour it through a filter into a jar and use it again. It tends to take on the flavor of whatever it was you fried in it, so when I make fries I sometimes toss a bunch of onion and garlic in there too embiggen the oil flavor.
Home fries are leagues tastier than restaurant fries, especially so since you can coat them in the seasoning of your choosing (if any at all other than salt), and they've got to be one of the easiest and cheapest cooking tasks ever.

this nigga is a lying spider, fries are easy as shit. Slice them, soak them in warm water for 20 minutes, dry them on a towel or paper towel or whatever the fuck you want and throw em in the oven at 425 for like 18 minutes and they'll be delicious and crispy.

That only works for vegetables. If you put raw chicken in the oil, then you ahve to toss it out otherwise someone might get salmonella or listeria.
