Long story short I have a bag of meyer lemon cookies. They're crumbly, dry and crunchy...very tasty too. So much so that I think they'd make a good pie crust.
What's a good pie filling for a meyer lemon crumb pie crust? Presumably topped with whipped cream?

Whipped cream (Tub)
Cream cheese. (Brick)
Frozen lemonade. (Tuuuube)
Blend those all together until you don't have chunks of cream cheese and fill the pie crust.
