Saute them in garlic and oil.
Or steam them, mix with garlic, Parmesan/Romano, and enough breadcrumbs/oil to make a kind of cake/bread dough consistency. It's basically like a giant fritter I guess. Made it one time when I was cleaning out my cupboard and found a few cans of green beans. It's pretty good.

Forgot to say bake the fritter thing at like 400F until it's browned and heated all the way through.

When they're in season (cheap) I get a giant bag and blanch them in salted water, then stick them in the fridge. I'll either just snack on them straight up, or sauté them as a side.
