so I bought some katsuobushi so I could make Dashi. Never made it before. However in Australia i can't seem to get Kombu. Can I just use MSG crystal's instead or is there something I can use as a substitute?

You could use a little MSG if that's all you can get. It won't be exactly right but you can probably make it work.
Remember when cooking dashi:
-when using Kombu make sure the water is hot, but NOT boiling. Boiling kombu tastes and smells like low tide. Awful.
-Use a fuckload of katsuobushi, but only for a short period of time before straining it out. 1-2 minutes.
Pic related is instant dashi. You might want to use that if you can't get konbu. It already contains bonito.

yeah all I can get is MSG, don't know how much Kombu adds in terms of flavour. If I like it I might try getting instant Dashi or I think I can get some kind of concentrate
