I use mine to make stocks. I save several carcasses from rotisierrie chickens, toss them all into my larger pot with ~6-8 cups of water, and let it cook for 10+ hours.

I have a pressure cooker but i mostly only use it to make beans and chicken broth. Id love to get one of these though.
anyone have the 3 or 6 quart instant pot? would that be enough for a single person? i'm living in a dorm with a communal kitchen that's infested with people infusing eggs with teflon scrapings and playing rap music from their phones

I just received an Instant pot for my wedding and I've made a great masala-type dish with tomatoes, chicken thighs, and chickpeas. Came out pretty rich and the chicken was extremely tender after only 20 minutes under pressure. Looking forward to trying things like bolognese sauce, braised short ribs, and stocks because that shit takes forever otherwise.
