What's a good vegan alternative to lamb? I'm making a dinner for my vegan gf, and although she's cool with me eating meat on my own time, I obviously can't cook her a meal with meat in it. I was planning on making a morrocan soup/salad/flatbread style meal but most of the interesting soups require lamb. Tofu doesn't really seem like the right alternative to use in a slowcooked soup like this, but I don't really know what else to use. Mushrooms? Does anyone have any advice?

Mushrooms make a good alternative to meat, and doubly make good soup.
What's the soup? They eat a good deal of chickpeas and other legumes in Morocco, maybe you can use them. Eggplant and mushrooms have a meaty texture too.

Nothing in particular. It has a specific flavor that yours never going to replicate with any vegetable, so just use whatever you would use otherwise in place of meat. Mushrooms are good for slow cooking because they don't really change in texture after a certain point.
