I've recently started learning to pickle things and wondered what you guys like to can or pickle. Made this recently and it's pretty good, just a bit unbalanced. It's just fresh jalapeƱos, an onion, water, vinegar, salt, sugar and some spices. Post your recipes and ideas.

I make sauerkraut. Made 4 gallons that finished last month. Good stuff.
I am an American and thus demand instant gratification with all things, especially food. That aside you can make some good pickled okra real easy but it never comes out with my preferred texture. It's always tough like eating a shirt or too soft and mushy. Been meaning to make mead too which is somewhat of a similar concept.
