I am making Mapo Tofu tomorrow in a competition with a girl im dating. I was wondering if you could share some advice and recipes.
I have made the dish before, but I do not have the recipe book I used and would love some help.
make it inedibly spicy and then give her a bite and when she's incapacitated by the pain and spice spray her with a hose
>ground pork - or beef - fry in pan with a little oil, push to side, fry aromatics for 1-2 minute, then combine
>fermented black bean - saute this with the other aromatics
>dobanjiang (fermented broad bean paste w/ chili) - saute this with the other aromatics
>sichuan peppercorn - both infused into oil over low heat, and crushed/ground, on top at the end
>ginger, garlic, spring onion
>silken tofu, not any other - and be gentle with it after you place it in the pan
>a little corn starch slurry - note it will thicken more as it cools
>serve with rice or nothing at all
I won't give you precise amounts or instructions, there are plenty of vids from authentic genuine chinks on the jewtube.

Chili oil is a must.
Granted if a girls eating it she might not appreciate the masterpiece of grease and fat that is mapo tofu done right.
