i also made a red vinegar reduction, which i guess is just olive oil, red wine vinegar and onions simmered for a bit. great dipping sauce.

I buy all my meat from the manager special just about to be thrown in the dumpster section. Hardly ever give myself food poisoning. Meat should be well hung anyway.
