Insects are typically rife with parasites so you'll want to fry them. Makes them crunchy and dries them out so they don't squirt when you bite them. They're delicious that way, but I'd also suggest keeping them alive for a few days and feeding them oats to clean them out so they don't taste like dirt before hand.
