Anyone here into fermenting bread for a few days prior to baking?
I've never seen a post about it in all my years on /ck/. It's supposed to be much better for you.

I do lazy man bread. I started with this video.

Anyways I use a breadpan now and actually mix it in the breadpan so only one dish to clean.
This is my recipe.
>Ingredients
4 cups flour
2 cups water
Yeast (teaspoon or whatever)
>Directions
1. Mix up all ingredients into a bread pan.
2. let it sit for a few hours (4-10hrs or you get bored) until it gets bigger
3. stir it with a chopstick or whatever
4. let it sit a half hour more
5. Bake in oven for 25min at 350F
6. Turn off oven and let it cool in the oven
That's it.
i always do this
just make the dough as usual, maybe a little wetter and with a little extra sugar, and then just leave it in the fridge overnight (either in an airtight box or just in the bowl with a teatowel over the top), but just make sure you go back to punch it back a couple of hours later cos it'll rise at first, but then it'll grow much slower after
i usually leave it for just one night, and then take it out to come to room temperature before shaping and rising and baking. i've left it for two nights before, but very occasionally it won't rise well after that
freezing also works, so just stick the dough in the freezer once you've made it, and then defrost in the fridge overnight when you need it, and then bake as usual
it's definitely easier overall, as you don't need to spend as much time kneading, plus i think it makes the flavour a little stronger
