Is there any benefit to boiling a whole lump of meat as opposed to simmering smaller, more uniform pieces? I would assume that boiling such a large cut of meat it until the centre reaches 60C would lead to the outer edges to overcook and dry out.

Why would you boil a lovely piece of venison like that anon? Vension is grilled or roasted, or you cut it up for stew or chili, or even grind it into burgers. The one thing you don't do is boil it.

My roommate offered some nameless sauce made my mixing yogurt, tahina, salt and pepper, no ratios really for him.
