Never heard it called "frog eye salad" before, but my grandma makes it.
It's basically Ambrosia salad (canned fruit, whipped cream, marshmallows, maybe some chopped nuts)
but with tapioca balls in it as well.
It tastes quite good actually.
I like it with crushed pineapple and pistachios.

I think it's a throwback to the 1950's and 1960's style of "food" which consisted of throwing a bunch of canned shit together in a casserole dish or jello mold.
More common for pot luck and hosted dinner parties than for everyday eating.
