How the fuck? You must of froze it immediately. Venison loin dehydrates and shrinks immediately. That's why after a kill and field dressing it the tenderloin is always what's for dinner.

Brine it. Apple juice, tons of salt, whole garlic cloves, peppercorns, rosemary and thyme. Also I'd recommend not cooking it past medium.
