Why do I see no good western chefs in Chinese food? There are great Japanese/Indian/whatever western chefs all around by comparison.

China is unusual in that it has had decades to ejaculate its upper class, and the related culture, into disapora. India and Japan never systematically tore down or purged its intelligentsia so whatever we get, is the same as we get from other countries. Especially with all the action giong on in Hong Kong dining, with Chinese people interacting for generations with whatever whites might pass for Europe's tastemakers, so a random new white guy in a Chinese kitchen isn't really going to be able to bring anything new to the table.
