I made meatloaf, mashed potatoes and roasted radishes (in season right now btw). In hindsight, I should have just blended in the radishes with the potatoes. Kinda like a parsnip mash. but I didn't have any other vegetables that weren't frozen.

I probably should have just used the frozen stuff.

flour, salt, eggs, carbonated water, sugar and grated some frozen lemon

pasta with a fuck ton of swiss chard, garlic scapes and bougie olive oil. A little butter and chili flakes and black pepper. Simple weeknight meal but it's hitting the spot!

I'm increasingly deciding that olive oil is 100% worth paying for the good stuff if you can. It really makes a huge difference.
