I noticed that in a lot of 90s films, characters will drink coffee at night time, even if they have a day job.
Is drinking coffee at night a common thing in US culture or just used in movie sets to make a scene look comfy?

Really more the latter
But coffee in the US during the 90s was fucking horrible, so considering that the quality was so shit, combined with the fact that there's a lot of water in it compared to something like an espresso, it's not hard to see people being able tk drink it at night.
Then again, I'm a literal caffeine addict who can sleep right after taking a few caffeine pills and a /sip/ so I may be biased.
I think it means they're expecting to have sex

People who regularly drink coffee will not get a caffeine kick. Personally i often drink a coffee in front of the computer before brushing and going to sleep

very common i know people who will make some coffee literally right before going to bed
People also manage to smoke a cig and drink coffee at the same time without having to immediately take a shit. More Hollywood magix

For some people, coffee is an article of the faith.
Sip, sip, sip all day, maybe switching to decaf in the evening. I imagine there are some Brits who are that way about tea.
