It's a marinaded pork belly baked in oven. The marinade is asian style including ingredients such as garlic, hot peppers, ginger, shaoxing wine, soy sauce and sugar. The sauce is a marinade reduction with additional spices added including sichuan pepper corn and star anise.

honey was added to the reduction to give it a bit of sweetness to dampen the hot pepper as well as thickening the sauce. Belly fat rendered from cooking was also emulsified into the reduction before serving.

The marinade will have done very little apart from flavour the surface, considering the large size of the original cuts. You would probably have been better off dry-brining the pork and using the marinade as a mop.

it was marinaded for a day, flavor wise it's subtle but was in there.

may try a brining for something else next time, with other spices.
the fat absorbed a lot of the flavor, lean part not so much.
