it's not as good as fresh bread, but as long as you let it thaw completely it's as good as day-old bread.
I eat gluten free bread because my immune system is a piece of shit, and most gluten free bread has to be frozen as a partially apt punishment for being objectively inferior.

I buy my groceries at Costco, so you bet your sweet ass I freeze bread. Without freezing most of it and taking it out as I need it, there's no way to eat it all before it turns into a giant pile of mold.
I actually prefer it post-freeze because a lot of the excess water gets turned into ice crystals on the outside, which I can then brush off. It makes for a much crisper toasted whatever -- rolls, bagels, loafs, whatever I bought that month. . . .

Nobody is freezing home-made bread.
I worked in a small kitchen and we froze bread. Sometimes if things weren't planned right, we'd have to microwave to thaw it. It came out absurdly soft and moist.
