Take some cheese, put it in a steel pan, dump some brandy over it, TORCH THAT SUCKER LIKE WE DID THOSE JAP BASTARDS BACK IN '45!!!!! Put out the fire by squeezing a lemon over it. Serve.
Optional: Shout "ROPA!!!" when you ignite the brandy, because ethnic jibbajabba.

I don't think you're serious. Regardless, I'll contribute a simple tzatziki sauce recipe:
>16oz Greek yogurt, not flavored or sweetened
>2 good-sized cucumbers
>2 tablespoons olive oil
>juice of half a lemon
>salt and pepper
>1 tablespoon chopped fresh dill
>1 teaspoon chopped fresh mint
Peel and chop the cucumbers, remove seeds if they have them. Peel and chop garlic cloves. Combine all the ingredients in a blender or food processor and blend until smooth and well-combined. Transfer to a bowl and refrigerate one hour before serving. Goes great on vegetables and meats.

Ghetto tzatziki (not really tzatziki, just yogurt sauce)
1/2 cup plain greek yogurt
1/4 cup mayonnaise
2tbsp. lemon juice
1 well crushed clove of garlic
Chopped Mint or Parself
Mix in bowl until consistent.

I make a yogurt sauce too, though I don't know exactly what it is called...
1 cup of Greek yogurt
Zest and juice from half a lemon
2 tbsp olive oil
2 tsp paprika
1/2 tsp cumin
1 tsp red pepper flakes
1/8 tsp cinnamon
2 cloves of minced garlic
1 3/4 tsp kosher salt
1/2 tsp cracked blk pepper
Mix well, brush on chicken or lamb, with onions, green bell peppers and cherry tomatoes skewers with basted yogurt sauce broil or grill and serve with a side of couscous. Maybe not 100% Greek cuisine, but I would say it classifies as Mediterranean.
