This has replaced cheddar and provolone for me. Buy a large block at Costco and use it pretty much whenever I need cheese

Yeah, pepper jack is a great all-purpose cheese. I'm a total cheese snob (seriously, and I'm not even embarrassed to say so), and I enjoy good pepper jack, especially on hot sandwiches and burgers. When I make grilled cheese sandwiches, I use sharp cheddar and pepper jack, usually, although I love experimenting with other cheeses too. My latest craze has been making blue cheese compound butter, and spreading that on the inside of the bread before adding other cheeses and grilling. The blue cheese compound butter tastes great on the inside, but doesn't work as well on the outside, however parmesan or Asiago or grana padano compound butter works nicely on the outside.

how do you store blocks of cheese without mold growing on it? do you portion a bit of it and freeze it? I don't eat cheese enough
I just freeze it. I mostly use cheese for cooking anyway so it doesn't matter how the freezer fucks up it's texture.

Since the tillamook cheese comes tightly wrapped, I just don't pull off any more of the plastic than I need to. I find only the exposed face molds, and even then it does so very slowly.
