You can cold smoke bacon, lox, etc. with one of these maze like contraptions. They're under $30 on amazon and they work. Just put it in the bottom of your tray without heat and light one end and it will slowly trickle smoke over your meat or cheese just like what cold smoking is supposed to do. Works with any grill setup, too.

usable indoors?

I doubt it. It produces a relatively small volume of smoke for a 12 hour period but that would be too much to have in an enclosed space. A balcony, patio or porch would work. Surely even apt. buildings in big cities have a fire escape access and that would work for it, right?

Be careful with cold smoking, if you don't do it just right you're opening yourself up to a whole host of diseases. Unless of course you're planning on cooking your meats afterwards, or doing cheeses.

Depends on the city, some prohibit using charcoal/smoke on balconies.

Wish I knew that before fucking buying my grill.

OP here.

I tend to prefer hot smoking. Not as flavorful at times but you know what you are going to get.

Ps. My girlfriend wants you all to know that Hickory smoked Corn is AWESOME!
