I want to buy a sharpening stone, but I dont have much money. Its to sharpen a yanagi for sashimi and general use. I heard the best one to have is the 1000 grit so I was thinking about the suehiro splex 1000 or the naniwa 1000/3000. Anyway I have these to choose from.
