Just moved to the PNW from the Midwest and why the hell do these people not have any knowledge of the Coney island hot dog.
Literally no one makes them here and it makes me so very very sad that I can't enjoy them
Should I open my own West coast Coney island stand or should I just make my own meat sauce? I swear they have every dog from here to Kansas City in the specialty hotdog establishmemts but all I really want is a Classic bun+classic hotdog+ meat sauce+ shredded cheese..... And maybe some shredded onions ...... Is that too much to ask?

You didn't specifically say "Portland" but I'll rant all the same. Besides your precious Coney dogs there is a huge lack of Asian and Middle Eastern influence in the PNW (except Thai and Lebanese) I forgot what good Indian food tastes like, and I have to drive 13 miles for a good burrito. It's just pizza, burgers and beer up here.
I think Chef John had a Coney dog recipe and I'm not even kidding when I say that was the only recipe of his I tried to cook, it turned out alright, good luck.
