First bread attempt today
1) Any suggestions/improvements?
2) It smelled a little like yeast when I cut it open. Reason/how to fix?
way too dense, knead the dough more, cut slices when you go bake it so it can continue to rise once crust forms, idk about yeast smell

Looks like your yeast didn't have a chance. Give it longer, or keep it in a warmer room, or try not to use chlorinated water.

This is accurate but the yeast smell is from a lack of sitting. You need to rest the bread before cutting it, kinda like a steak. Patience my friend.

Longer, slower rise is nearly always a good thing.
Get a scale and weigh your flour every time, it's a big deal.
Did you bloom/rehydrate the yeast or use instant yeast?

Salt, not sugar. But yes, it's simple, easy and really fun. I can't describe my excitement when I relised that my dough was starting do look right while I was shaping it.

sourdough does have yeast. I guess what you mean, though, is don't make bread with yeast from scratch. A bread without yeast doesn't bear thinking about.
