About a month ago I cut down some fairly thick branches of a cherry tree growing in my yard. I was thinking about using the wood to smoke some pork ribs, but is it that simple? Does cherry wood refer to a very specific kind of tree, or will any tree that grows cherries work? Does the wood have to be dried or treated in any way? Maybe these questions are silly, but I don't want to ruin my ribs.

Chip the wood and let it dry out. You can let it happen naturally, which I find gives it a more mellow, deeper flavor, or you can dry it in the oven which only takes a few hours and works well enough.
