If you ever had Pho its a very similar taste. Basically a licorice flavor, doesnt require much, pretty strong.

If youre looking to break down meat to make it tender, pineapple would make a good marenade. Then just throw some loose sauce like teriyaki, worsherstire, franks.. whatever you want to add some additional flavor. Thick sliced onions too if you want to grill them up.

Sugar
Garlic
Thai peppers
Honey
Dark soy sauce
Lemongrass
Shallot

Then I usually grill it with sliced Serrano peppers.
