So, Transylvania.You can find a mix of romanian, german and hungarian cuisine. Not bad.
Do take into consideration that Romania is a union of smaller countries, with different cuisines. For example
Wallachia-lots of greek and turkish influences, we like various types of meat dishes such as mici ( fried sausages without casings, like cevapi), sarmale ( stuffed cabage rolls) and pastrama ( large steaks brined in wine and garlic for several days) Americans got their pastrami from us.
We eat mostly chicken , pork and a lot of mutton
Moldova- slavic influences, they like borsh,pelmeni dumplings and big ass meatballs, called parjoale
Transylvania- lots of potato based dishes, with beef steakes , many german and hungarian dishes
Dobrogea- every dish is made with fish
Bukovina- every dish is made with lard
As for the gyppos, they like stews, the best one is goose breast with onions and tomatoes.
